Chocolate Love

(Spoken in my deep, Barry White voice) Hey, lovers, this one’s for you.  This recipe is one of those when you want to light a candle, set the table with the china, use the good wine glasses and turn on some Barry White.  This is chocolate love at its best.  I’m talking about molten chocolate lava cakes. 

These little babies come out of the oven looking all cake-like, then you cut into it and out from the center comes molten chocolate goodness.  With a few easy-to-find ingredients, you can make some of this chocolate sin for your special someone. Let me show you how to do it, you dig? 

Molten Chocolate Lava Cakes (makes 4)
6 oz. semi-sweet baking chocolate (look for Ghiradelli, baby)
6 oz . butter (diced, room temperature)
3 eggs
1/2 cup granulated sugar
1/3 cup all-purpose flour
A little extra butter for your ramekins 

Let’s put this love together:
Pre-heat your oven to 350 degrees (Gotta get it hot for your love) and butter those ramekins, real good now. Get out your double boiler and get ready to melt some chocolate.  Don’t have a double boiler?  Then do what I do and use a sauce pan of boiling water and a heat-proof bowl, come on! make it happen, baby.   Break up that chocolate in your bowl and let the meltin’ begin.

Once that chocolate melts, lets add the butter to the bowl of liquid chocolate.  Stir it on in there, baby.

While your chocolate and butter get to know each other better (don’t go to far, give a stir every now and then), get another bowl or mixer and add your eggs and sugar.  Beat those babies up until they are thick and white.

Time to add the chocolate to this party.  While the mixer is on low, drizzle that dark and creamy chocolate into those lovely eggs.  Mix it good now.

Time to add the flour.  Now be careful here – don’t want to mix to much.  Make the cake all tough and stuff.  Mix it till it is almost blended and you can finish mixing it off with your spatula.  

Almost done now.  Ladle that warm, chocolate batter into those well-buttered ramekins.  Let’s leave a little room at the top.

Put those babies on a sheet pan and bake ’em for 15 minutes.  Using some tongs or an oven mit.  Turn those hot, little cakes out on a dessert plate.  Sprinkle with a little powered sugar or be crazy and add some fresh berries.  It’s your cake, make it happen, baby.

See, I knew you could do it.  You made some sexy, chocolate cake for your baby.  Be careful though – eat it too quickly and you won’t be kissing goodnight, you’ll be taking care of those mouth burns.  I didn’t call it lava cake for nothin’, baby.  😉

    This is one of my favorite desserts. I’m sending a link to my past co-worker – we always had this at a restaurant in West Palm. We would just order wine, an appetizer, and this cake. Yum! Yours looks delicious!
